I have a confession; I am slightly obsessed with pasta. No it may not be the healthiest option for you. But, does it make you feel all warm inside? Yes. I mean, it’s December and the temperatures are below 50, so why not make a heartwarming dish for yourself, friends, or family. With all the last minute running around for Christmas and present wrapping, here’s a quick Cajun Pasta recipe you can whip up and still check off your holiday to do list before the 25th. You’ll definitely get some brownie points for this one!
Ingredients:
3 Boneless Chicken Breasts
3 Tablespoons of Olive Oil
Cajun Seasoning
Parmesan Cheese
Angel Hair Pasta (personal preference, you may use any type of pasta)
1 Cup of Heavy Cream
1/4 of Lemon Zest ( half of a squeezed lemon will suffice)
1-2 Tablespoons of Fresh Parsley (chopped)
Salt & Pepper
Roma Tomatoes (sliced in half)
Directions:

Slice chicken into 1 inch pieces, add Cajun seasoning, salt, pepper, and a little olive oil to coat chicken. (I’m not a recipe follower, you may not be either, but you may also add whatever you usually add to season chicken with)

Heat your grill pan and add the remaining olive oil to the pan keeping the heat on medium. Add the chicken for about 6-7 minutes, be sure to flip once, and check to make sure they are cooked thoroughly.

While your chicken is cooking, add your pasta to a large pot of boiling water. I like to add butter, and a little salt to make the pasta itself have a little more flavor.

Once your chicken is done cooking add butter to the grill pan, add the heavy cream and stir it all together. Once the heavy cream has coated the chicken add some lemon zest. To add more flavor, I like to add more Cajun seasoning to the cream sauce too. Continue to gradually stir all the ingredients together, if it’s too thick you can add more heavy cream sauce as needed.

Once your sauce is to your desired texture you may sprinkle the parmesan cheese, add the roma tomatoes, and parsley.
Perfect combination of flavor, the cream sauce literally melts in your mouth and has the perfect amount of spice, I LOVE spicy food so I usually sprinkle crushed red pepper to top my personal portion off. This recipe can be made in 30 minutes or less, that way you get back to life with a full stomach!
